With over 20 years experience in the culinary world from kitchen manager, catering director, private chef, line cook, server. Michelle has done it all. When people ask her why she choose to further her baking skills versus culinary skills. It's because baking is like science you have to get the experiment right or it won't work. Hence the name laboratory and working with chocolate you have to be part 'mad' and part 'scientist'.
